The Chef de Cuisine reports to the Hotel Manager/Dir Ops/Executive Chef, managing and coordinating activities of food preparation, kitchen, pantry, and food production, commissary, including food inventory and storage. Works with the F&B Leader to operate, purchase and requisition ingredients, kitchen supplies and equipment and manages inventory and stocks in adherence to Hotel and Organizational guidelines. Propose seasonal and new menu rotations apart from creative planning and production of Daily Specials, collaborating with the other Restaurant Leaders in planning menus, preparing and portioning and controlling costs. Supervises all dishwashers and stewarding to ensure cleanliness of kitchen and equipment. Oversees all Banquet production, consistency and expenses. Partners with Maintenance team, to create a repair and maintenance plan for caretaking of all equipment. Primarily supervises the culinary team to ensure quality and observe preparation and food presentation, striving to achieve guest expectations. Supervises inventory, storage, and distribution of food and supplies. Oversees the kitchen scheduling process, while labor standards are met and managing resources accordingly to ensure a profitable organization. Ensures kitchen hygiene requirements for local, federal and brand are met and complied to at all times. Mentoring the Team on recipes, consistencies and leadership.
· Read, write and speak and understand English. Bilingual is an advantage.
· Ability to understand P&L, work with the F&B and Senior Leaders on financial goals and accomplish them.
· Minimum 2 years Culinary Leadership experience, free standing, upscale hotel restaurant kitchen.
· Minimum 7 years kitchen experience in Restaurant, Hotel, Catering and Banquet or Production facilities, with exposure to Corporate F&B structure and guidelines.
· Food/Beverage Manager Certification.
· Ability to communicate effectively with the public and other employees.
· Knowledge of Food production for Banqueting, Commissary and Restaurant line.
· Able to lead high volume, fast paced production, and restaurant.
· College degree or certification in culinary field/hospitality field preferred.
· Able to manage and delegate, and hold self and team accountable.
